Instructions
1. Preheat your oven to 400°F (200°C). 2. Whisk the eggs in a large bowl until smooth. Season generously with salt, pepper, garlic powder, onion powder, and Green Goddess seasoning. 3. Fold in the sweet potatoes, broccoli, prosciutto, and a handful of Parmesan cheese. 4. Heat a cast iron skillet over medium heat and lightly grease with oil or butter. 5. Pour in the egg mixture and gently spread the ingredients evenly. 6. Bake in the oven for 25 minutes, or until the center is set and the top is golden. 7. Finish with more Parmesan on top and let cool slightly before slicing and serving.
